To control and orchestrate the service of Food and Beverage and maximise guest satisfaction through anticipating guest requests and responding to special requests positively

To maximise any and all revenue generating opportunities, effective yielding, introducing and maintaining incentives and motivating programs for the colleagues within the department

To motivate, support, train and lead a team in any given outlet of the property

Summary of Responsibilities
Reporting to the Director of Restaurants, responsibilities and essential job functions include but are not limited to the following To implement Fairmont service standards through disciplined administration of departmental Standard Operating Procedures

To develop the leadership skills of leaders in the Restaurant This includes the development of decision making skills, performance management techniques, function planning ability, process mapping and analysis, and sense of urgency and ownership
To ensure effective working relationships and clear communication are maintained with all colleagues and leaders in the restaurant and other departments
To develop and administer the departmental Employee Engagement Survey Action Plan and use monthly Peakon data to ensure that we are maximising our colleague experience through engagement
To critically assess procedures, policies, and methods of operation and alter them where necessary in order to maximise results
To ensure the financial success of the department by monitoring productivities, revenues and costs
To implement all FHR finance and accounting procedures that are relevant to the restaurant operation
To liaise with the kitchen to ensure that a common vision is shared
To create and implement all beverage menus within the department as well as work closely with the kitchen on the creation of all food menus
To liaise with other Food and Beverage departments to ensure that all resources are being equally shared
To ensure that all equipment, fixtures, and furniture of the department are kept in the best repair possible and are used in a safe and proper manner
To ensure that all financial targets are achieved
To develop and maintain a safety culture within the department and ensure departmental adherence to and awareness of Health and Safety standards
To ensure departmental participation in all hotel-wide environmental initiatives, and to develop departmental specific environmental initiatives
To achieve or exceed all targeted objectives as it relates to our pillars (Forbes, LQA, Peakon etc)
To ensure the successful seasonal transition of the restaurant
To attend leadership meetings, pre-convention and other meetings as required


Previous department head level experience required, 1-2 years an advantage
Highly organized with the ability to handle numerous tasks at the same time
A demonstrated ability to delegate tasks to team members and follow up on same-ensuring results
Strong, proven leadership qualities and management skills
Participation in Fairmont Fundamentals, Train the Trainer, and Interaction Management an asset
Working knowledge of Micros is essential
Post secondary degree in hospitality or Food & Beverage Management as asset
4-6 years experience in the Hospitality Industry 4/5 star experience a requirement
Outstanding communication skills, both written & verbal
A confident & dynamic speaker, able to communicate and interact effectively with all levels of an organization
Enthusiastic and positive personality with the ability to build trusting relationships with others
Proven organizational skills, works well on their own Able to set and meet deadlines with quality results
Applicable job related skills as per Accountable Duties
Microsoft Word, Microsoft Excel, Spreadsheets, Microsoft Access, Microsoft PowerPoint, E-mail
Ability to read and interpret documents such as spreadsheets and accounting documents Ability to write reports and correspondence Ability to speak effectively with internal and external customers
